About Dekomawashi
Dekomawashi (でこまわし) is a delightful type of miso-dengaku, a skewered and grilled dish made using local ingredients such as potatoes, buckwheat dumplings, tofu, and konjac. The ingredients are first lightly grilled, then coated in a flavorful miso sauce, and grilled again to perfection.
This dish is deeply rooted in the cultural history of the Awa region, where puppet theater, originally popular on Awaji Island, flourished. The name “Dekomawashi” comes from the resemblance of turning the skewers while grilling to the movement of puppets, or "deko," in traditional puppet performances.
