Honetsuki Dori (Bone-in Chicken)

About Honetsuki Dori (Bone-in Chicken)
Honetsuki Dori (骨付鶏, Bone-in Chicken) is a famous local dish from Marugame City in Kagawa Prefecture, made by roasting a whole bone-in chicken thigh to perfection. Inspired by roast chicken from Hollywood films, the founder of the izakaya restaurant "Ikku" in Marugame City came up with this hearty dish in 1953, aiming to create a bold, movie-like dining experience. Since then, it has become a beloved specialty cherished by locals and visitors alike.
The chicken thighs are seasoned with salt, pepper, and garlic, then carefully roasted at high heat to create a crispy skin and juicy interior. There are two main varieties to choose from: "Hinadori" (young chicken), known for its tender, succulent texture, and "Oyadori" (adult chicken), which offers a firmer bite and deeper, richer flavor. Chicken thigh meat is not only high in protein but also contains a balanced amount of fat, making it a great source of energy.
Pairing Honetsuki Dori with Kagawa's local sake enhances the dining experience. The smooth and full-bodied flavors of the sake complement the spiciness and savory richness of the chicken, offering a refreshing and satisfying combination.
When visiting Kagawa Prefecture, don't limit yourself to just enjoying its famous udon. Be sure to try Honetsuki Dori as well. Its bold, spicy, and juicy flavors are sure to leave you with an unforgettable culinary experience.
