About Hanasaki Crab
Hanasaki Crab (花咲ガニ, Hanasaki gani) is a member of the hermit crab family, part of the King Crab species, and is in season from summer to autumn.
Known for its thick, meaty legs and dense flesh, this crab boasts a rich, intense flavor and a unique, sweet aroma. Due to this strong flavor, it is rarely eaten raw. Instead, it’s often prepared by grilling with salt, boiling, or made into "Teppo-jiru," a miso soup featuring chunks of its legs.
When thoroughly cooked, its shells release chitosan, which is said to have potential health benefits like aiding in weight loss.
