This dish is made by thoroughly curing pork belly with Okinawa's famous salt, "shima maasu," followed by careful desalting to achieve the perfect balance. In the days before refrigeration, salt-curing was the most effective method for preserving meat, and Suuchikaa remains a beloved delicacy in Okinawa to this day.
