Hoba Sushi (朴葉寿司, Hoba sushi) is a traditional dish from Gifu Prefecture, where sushi rice is wrapped in fragrant magnolia leaves. These leaves are believed to have antibacterial properties and allow for easy, mess-free eating. Originally, this dish was created as a portable meal for farmers and workers in the mountains. Letting it rest for half a day allows the leaf's aroma to infuse into the sushi, enhancing its flavor. There are two styles—ingredients can either be placed on top of the rice or mixed into it.
