Hoba-zushi introduction

It is a local dish of Gifu Prefecture with vinegar rice wrapped in park leaves. It is said that it has a bactericidal effect and can be eaten without dirty hands, so it began to be made as a portable food for farming and mountain work. If you lay it for half a day, the aroma of Park will be transferred to sushi and the taste will be enriched. There are some ingredients arranged on top of vinegared rice or mixed, and the ingredients to put in vary depending on the region, so you can enjoy a variety of flavors.
