About Sawara Oshinuki-zushi (Pressed sushi with Spanish mackerel)
When broad beans fill out and barley begins to ripen, the Seto Inland Sea grows busy with Spanish mackerel fishing. Around this time, farm households in Sanuki prepare dishes with Spanish mackerel and invite relatives and friends. The centerpiece is oshinuki-zushi. In some areas, a custom continues in which a young bride takes Spanish mackerel to her parents’ home, where her family makes oshinuki-zushi for her to bring back to her marital home.
