About Spanish Mackerel Oshizushi
When fava beans start ripening and barley begins to mature, the Seto Inland Sea comes alive with Spanish mackerel fishing. During this season, farmers in the Sanuki region prepare dishes using Spanish mackerel and gather with family and relatives.
The highlight of these dishes is "Oshizushi," a pressed sushi made with Spanish mackerel. In some areas, there is a charming tradition where young wives return to their parents' home carrying Spanish mackerel, make Oshizushi (押し抜きずし, oshinuki zushi) there, and then bring it back to their marital home to share.
