Kameyama Ramen (亀山ラーメン, Kameyama ramen) is a modern specialty born in Kameyama City, Mie Prefecture. In 2013, it gained nationwide recognition by winning the "Local Ramen Grand Prix." This ramen is crafted with a deep dedication to local Mie ingredients, offering a taste of the region's natural bounty in every bite.
The soup is uniquely rich and flavorful, made with a base of beef bones from Mie Prefecture and a blend of three types of miso: red miso, soy-based miso, and barley miso. This combination creates a well-balanced broth full of depth and umami. The noodles, medium-thick and delightfully chewy, are prepared using "Nishino Kaori," a premium wheat grown in Mie, and pair perfectly with the robust soup.
For toppings, three types of mushrooms native to Mie—hiratake, hanabiratake, and hatakeshimeji—add distinct textures and flavors to the dish. A hint of butter brings a creamy aroma that ties all the ingredients together harmoniously.
