About Sun-dried Round Urume Sardines
Urume Sardines (うるめいわし, urume iwashi) are a type of sardine named for their delicate nature and short lifespan, as well as their moist, glistening eyes—which inspire their name, "Urume," meaning "moist eyes" in Japanese.
Urume sardines have lower fat content compared to other sardines, making them ideal for drying into "maruboshi" (丸干し), a traditional preparation of whole, sun-dried fish.
