Sakata Ramen (酒田ラーメン, Sakata ramen) originates from Sakata City in Yamagata Prefecture, specifically from the northern Shonai region.
Its unique broth is crafted using pork bones, chicken, dried sardines, and kombu (kelp), paired with freshly made, house-crafted noodles. The standard toppings are simple yet satisfying—usually featuring slices of char siu pork, bamboo shoots, and green onions.
