Sakata ramen is a ramen that originated in the northern part of the Shonai region, mainly in Sakata City, Yamagata Prefecture. It is characterized by using homemade noodles using pork bones and chicken bones, as well as niboshi and kelp soup stock. The basic ingredients are simple such as char siu, bamboo shoots, and green onions. Also popular are the ones with wonton and other original flavors that have been modified in each store with a variety of original flavors.
