About Tokushima Ramen
Tokushima Ramen (徳島ラーメン) is a beloved local specialty from Tokushima Prefecture that has gained nationwide fame in recent years. The name "Tokushima Ramen" only became widely recognized after a ramen shop from Tokushima showcased it at the Shin-Yokohama Ramen Museum in 1998. Interestingly, locals traditionally refer to it as "chūka soba" or "shina soba," terms for Chinese-style noodles.
This unique ramen is characterized by its rich and flavorful pork-bone broth mixed with dark soy sauce, giving it a deep brown color. Rather than the usual chashu, tender pieces of simmered sweet and savory pork belly are used, and instead of marinated boiled eggs, raw eggs are added as a topping. The portion sizes are slightly smaller compared to ramen in other regions, as it is often enjoyed as a side dish accompanied by rice, a common dining custom in Tokushima.
