About Hitan Sushi
Hitan Sushi (ひたん寿し, Hitansushi) is a unique type of sushi made using local vegetables, pickles, and river fish from Hita.
At the heart of this sushi is the original "Takanamaki," said to have originated in Hita. It wraps a perfect blend of natto (fermented soybeans), grated yam, and green onions in vinegared rice, which is then rolled in takana (mustard greens). Surrounding this iconic roll are a variety of toppings, such as sweetfish (ayu), eel (unagi), shiitake mushrooms (donko), pickled vegetables, and vibrant seasonal produce, making this dish a feast both for the palate and the eyes.
The Takanamaki roll, created in the 1960s, has been a beloved and healthy treat for locals ever since. As Hita City is located inland, its sushi reflects the bounty of the mountains, prepared with unique techniques and flavorings. Hitan Sushi is a labor of love from Hita’s chefs, showcasing their dedication to preserving and celebrating local flavors.
