About Hitan-zushi

It is sushi made from vegetables, pickles, and river fish from Hita. Natto, yam, and green onions are wrapped in vinegared rice at an exquisite ratio, and wrapped in mustard greens, centered on the original “takanamaki,” which is said to have originated in Hita, and is colored with ayu, eel, donko, pickles, and a variety of seasonal vegetables, unique to Hita It's (no) sushi. “Takana maki,” which was born in the Showa 40's and has been loved by many citizens since then, is a healthy, tasty, and historic makizushi. “Hitan sushi,” which is made by arranging mountain food from Hita City, located in the inland area with its own preparation and seasoning, and used as a topping, can be said to be a dish filled with the commitment of sushi restaurants in Hita City.
