Ariake Sea cuisine (有明海料理, Ariake-kai ryori) hails from the nutrient-rich waters of the Ariake Sea, which spans Kumamoto, Saga, Fukuoka, and Nagasaki Prefectures. Countless rivers flow into the sea, supporting its abundance of marine life.
Famous for Japan's largest tidal flats and tidal differences of up to six meters, the Ariake Sea is teeming with rare and fascinating creatures. Local specialties include delicacies such as mudskipper (ムツゴロウ), warasubo eel (ワラスボ), tongue sole fish (クチゾコ), and ark shell clams (赤貝), often prepared as grilled dishes, stews, or fried items—offering a truly unique taste experience that's hard to find elsewhere.
Another highlight is "Gani-zuke," a flavorful fermented dish made by crushing fiddler crabs (シオマネキ) found in the sea, perfect as an indulgent snack to pair with sake.
