About Yuba
Yuba (ゆば, Yuba) is a traditional ingredient from Nikko, believed to have existed since the Nara period in Japan. The kanji used for Yuba in Nikko is "湯波," which differs from the Kyoto version "湯葉."
It is made by simmering soybeans to produce soy milk, during which a thin film forms on the surface—this is yuba. Since making yuba requires a large quantity of soybeans, it’s quite a labor of love. There are various yuba dishes, such as deep-fried yuba rolls and soy-glazed yuba.
In Nikko, you can indulge in different yuba creations at restaurants and inns, enjoying the unique delicacies of this iconic ingredient.
