About Natural Rock Oysters
In the town of Kisakata, located in Nikaho City at the southern tip of Akita Prefecture along the Sea of Japan, the harvested rock oysters are celebrated as the branded "Kisakata Rock Oysters" (象潟の岩ガキ).
Towering over the town is Mount Chokai, an active volcano standing at 2,336 meters. Snowmelt from this majestic mountain transforms into underground spring water rich in minerals and nutrients, which flows into the waters off Kisakata. This nutrient-rich spring water fosters an abundance of plankton, the perfect food source for oysters. Additionally, the cold temperatures of the spring water slow the growth, resulting in natural Kisakata Rock Oysters that are larger yet firm and packed with a dense, rich flavor.
These oysters are harvested in the summer, during the season when snowmelt runs into the sea. With every bite, you’ll experience the perfect balance of briny saltiness, a hint of ocean breeze, and a creamy, luxurious richness that fills your mouth with flavor.
