About Hama-Yaki
Hama-Yaki (浜焼き, Hama-yaki) is a traditional cooking method from Niigata, where freshly caught fish from local fishing ports are skewered on bamboo sticks and roasted whole.
Carefully grilled over premium charcoal from Uonuma, the fish is cooked slowly and evenly with the radiant heat, resulting in a tender and juicy texture that locks in all the natural flavors. The roasting process also reduces excess oil, giving the fish a delicious smokiness while enhancing its shelf life.
