Influenced by Western food culture in the early Showa period, it is said that it began when cutlets were incorporated into rice bowls. In Kiryu City in particular, as defined by the “Kiryu Sauce Katsudon Association,” the style of using pork tenderloin, dipping freshly fried cutlets through the sauce and putting them on rice is mainstream.
The pork tenderloin used is low in fat and is characterized by its soft texture, and when deep-fried, it is crispy on the outside and juicy on the inside. Each store and home has its own unique recipe for dipping cutlets, and there are a variety of sauces, from sweet to spicy. Also, putting cutlets directly on top of rice is the Gunma style, which is characterized by a simple arrangement without putting cabbage on top.
