About Stone-grilled dishes

It is said to have originated from the fisherman's dish of Oga, and it is a local dish handed down in the Oga region of Akita prefecture. It is a hot pot dish made by stewing plenty of seafood caught in the coastal waters and seasonal vegetables in a miso-based broth. What is interesting is the cooking method, where soup and ingredients are put in a pot made of Akita cedar, and heated grilled stones are added to the finish and brought to a boil. By adding a heated stone and bringing it to a boil rapidly, it seems that it has the effect of boiling without missing the taste of the ingredients rather than simmering normally.
