There have been many soba restaurants in Ugo-machi since ancient times, and each shop competes for its taste, and it is popular as “Nishimonai soba” not only within the town but also by tourists visiting from outside the town.
The origin of “Nishimonai soba” begins with “Yasuke soba”. In the first year of Bunsei (1818), the founder, Kinyasuke (Konyasuke), learned the soba of the “Sunaba” line that was popular in Osaka. Yasuke, who was born to the seventh son of a farmer, went on a wandering journey in his teens, served at a soba restaurant in Osaka during his journey, learned how to cool down there, and soon after returning home, opened a soba shop “Yasuke soba”. Among the long-established soba restaurants that have continued since the Edo period, their sources are “Sarashina”, “Sandaba” and “Ko”, “Sarashina” is Shinshu, “Sunaba” is Osaka, and “Soba” has become the three major goodwill from the flow of Yamagata, and refined from the characteristics of each soba, It has established its own field.
“Yasuke Sobaya” is now the sixth generation, and those that follow the flow are “Matsuya,” “Soba Restaurant Shinota Soba,” and “Kotaro Sobaya.” In addition to these four, there are a total of 7 soba restaurants in the town: “Sobaya Hikozo,” “Sobadokoro Haseyama,” and “Hatanami Dining.” In addition, “Miharashi-so” regularly holds soba parties, and at “Kayabuki Sanso Kakuzan”, you can get soba noodles by appointment only.
