About Nishimonai Soba
Nishimonai Soba (西馬音内そば, Nishimonai Soba) has long been cherished in Ugo Town, Akita Prefecture, where soba noodle shops have flourished for generations. With its signature dish, "Hiyagake" (chilled soba in light broth), each shop crafts its unique flavor, attracting not only locals but also visitors from outside the town.
The origins of Nishimonai Soba date back to "Yasuke Sobaya," a soba shop established in 1818 (Bunsei 1). Yasuke Kon, the founder, was the seventh son of a farming family who set out on a journey at a young age. During his travels, he apprenticed at a soba shop in Osaka, where he mastered the "Sunaba" style of soba, which was popular at the time. Upon returning home, he opened "Yasuke Sobaya," introducing the chilled "Hiyagake" soba to the people.
Historically, soba in Japan is categorized into three major styles—"Sarashina," "Sunaba," and "Yabu," originating from Nagano, Osaka, and Yamagata, respectively. Over time, each developed its own refined characteristics, becoming prominent soba traditions.
Today, the legacy of Yasuke Sobaya continues through its sixth-generation successors, represented by renowned shops like "Matsuya," "Shinoda Sobaya," and "Kotaro Sobaya." In addition to these, Ugo Town boasts a total of seven soba establishments, including "Hikozou Sobaya," "Haseyama Sobadokoro," and "Hashimai Dining." Additionally, "Miharashi-so" hosts regular soba gatherings, and "Kayabuki Sanso Kakuzan" serves soba by reservation in a uniquely rustic setting.
