Fujinomiya Yakisoba is Shizuoka’s signature yakisoba. Its firm, springy texture surprises first-time eaters. The dish also values locally sourced ingredients, including cabbage, pork and eggs, along with spring water from Mount Fuji. Once cooked, it is sprinkled with aonori seaweed and powdered fish stock made from fish such as sardines and mackerel, which deepen its local flavor. It has long been enjoyed as a local favorite.
