Nama Morokoshi (生もろこし, Nama morokoshi) is a unique take on the traditional Akita sweet “Morokoshi,” which has been cherished in Akita Prefecture for generations. Traditionally, Morokoshi is made by molding and baking azuki bean flour, but Nama Morokoshi, created by the shop Tozanaan (唐土庵, Morokoshi-an) in Semboku City, Kakunodate, offers a soft and tender version instead of the usual firm texture.
The primary ingredient is a blend of premium azuki beans from Hokkaido, known for its excellent agricultural produce due to the significant temperature differences between day and night, combined with locally-sourced azuki beans from Akita. This harmonious pairing creates a refined and balanced sweetness in every bite.
