About San Mamen
Sun Mamen is a local ramen that originated in Yokohama City, Kanagawa Prefecture, and is a dish of thin noodle ramen with a soy sauce or salt base topped with crispy vegetables and pork to thicken it. There is “Pacific saury” in the name, but it has nothing to do with saury, and the etymology comes from “raw noodles,” which are a combination of “raw” (fresh) and “horse” (put on top) in Cantonese.
In the latter half of the 1940s, Sun Mamen began to be offered to workers working at Yokohama Port as a dish that was satisfying to eat and difficult to cool down, and gradually spread. Bean sprouts are an essential ingredient, and colorful vegetables such as Chinese cabbage, pork, wood ear mushrooms, and carrots are also used. The thick red bean paste goes well with soup and warms the body, so it's a popular ramen, especially during the cold season.
Currently, it is loved all over Kanagawa Prefecture, mainly in Yokohama Chinatown, and is a symbol of Yokohama's food culture.
