About Suuchikaa
Suuchikaa (スーチカー) is a traditional dish from Okinawa, consisting of salt-cured pork belly prepared as a preserved food.
The name comes from "suu," which refers to seawater or salt, and "chikaa," meaning to marinate or pickle. This dish is made by thoroughly curing pork belly with Okinawa's famous salt, "shima maasu," followed by careful desalting to achieve the perfect balance.
In the days before refrigeration, salt-curing was the most effective method for preserving meat, and Suuchikaa remains a beloved delicacy in Okinawa to this day.
It’s simple yet flavorful—enjoy it sliced thin as is, lightly grilled over a flame, or steamed with a squeeze of fresh lemon. Whichever way you try it, it makes for an irresistible snack that pairs wonderfully with your favorite drink.
