Naruto Udon (鳴門うどん, Naruto udon) is a unique type of udon characterized by its extremely soft, thin noodles that are so delicate they can easily be cut with chopsticks. The dish is typically topped with finely chopped green onions, fish cake (chikuwa), and fried tofu (aburaage), and it is served in a light, flavorful broth made from dried sardines (niboshi).
