It is known for its generous toppings of seafood such as shrimp and squid, meat, vegetables, and fish cake, as well as its thick, springy noodles.
Nagasaki Champon was reportedly created in the mid-Meiji era by the owner of a Chinese restaurant who had come from Fujian Province. It was originally devised to help Chinese students get proper nourishment, but it was so delicious that people in Nagasaki came to enjoy it too.
