About Hakodate Ramen
Hakodate Ramen (函館ラーメン, Hakodate ramen) is one of Hokkaido’s most beloved local ramen styles, alongside Sapporo Ramen and Asahikawa Ramen.
Its clear, salty soup is made with a rich dashi broth derived from pork bones and chicken stock, seasoned with a shio tare (salt base). This comforting soup pairs perfectly with medium-thin, straight noodles cooked to a tender texture. Common toppings include tender slices of char siu pork, bamboo shoots, scallions, spinach, and occasionally wheat gluten or naruto (fish cake).
