About Rokube
Rokube (六兵衛, Rokube) is a traditional dish from the Shimabara Peninsula and Tsushima in Nagasaki Prefecture.
This unique noodle dish features noodles made primarily from sweet potatoes, served in a clear broth flavored with seafood or local chicken. The distinctive dark-colored noodles, their soft and springy texture, and the subtle sweetness of sweet potatoes make Rokube truly unique.
The dish is said to have been created during the Edo period, when the Shimabara Peninsula faced hardship. A village headman named Rokube devised this method of making use of sweet potato flour as a preserved food resource, leaving his name to this comforting and historical dish.
