About Rokubee (Rokubee)
Rokubei is a local dish handed down around the Shimabara Peninsula in Nagasaki prefecture and in Tsushima.
It is a noodle dish in which noodles with sweet potatoes as the main ingredient are placed in a clarified soup made from seafood or local chicken.
It features mysterious dark noodles, a plump texture, and a subtle sweetness of sweet potatoes.
When the Shimabara Peninsula was hit by the Edo period, it is said that it was named because a person named Rokubei, who served as a master, invented it as a way to eat preserved sweet potato flour.
