Due to the dry terrain, many fields were historically used to cultivate fava beans as a secondary crop. Perhaps tied to the importance of water in daily life, the people of Sanuki (the old name for Kagawa) chose to roast fava beans instead of cooking them in water. This method transformed the beans into a staple food during busy farming seasons.
Soy Sauce Fava Beans (しょうゆ豆, shōyu mame) are made by roasting fava beans until golden brown and then marinating them in a special blend of soy sauce, mirin, sugar, and chili peppers. This dish boasts a savory and smoky flavor, offering a taste of Kagawa's traditional culinary heritage.
