Tottori Crab Sushi (鳥取かにずし, Tottori kani-zushi) is a local delicacy from Tottori Prefecture made with an abundance of snow crab (Matsuba crab), a prized regional specialty. This luxurious dish is crafted to celebrate the flavors of winter. First created in 1952 by a bento shop in Tottori City, the original "kani sushi" is considered the root of crab sushi across Japan. It features a chirashi-style presentation with a layer of vinegared rice topped with shredded egg crepes and generous portions of flaked crab meat, creating a beautifully vibrant dish. The bright yellow of the egg and the rich orange of the crab make for a stunning contrast that adds a festive touch to any dining table.

Tottori Prefecture boasts the highest volume of crab catches in Japan, and the winter-harvested Matsuba crab is especially renowned for its firm texture and delicate sweetness. Locally, crab sushi made with fresh seasonal crab has long been cherished as a gift for loved ones and as a welcoming dish for visitors.
