About Olive Hamachi
Olive Hamachi (オリーブはまち, Olive hamachi) is a unique yellowtail fish raised in Kagawa Prefecture, fed with a special diet that includes powdered olive leaves from the prefectural tree, the olive. This feeding process is carefully managed under strict guidelines to ensure quality and consistency.
The olive leaves are rich in oleuropein, a type of polyphenol known for its strong antioxidant properties. Thanks to this special diet, the hamachi's meat becomes less prone to oxidation and discoloration, resulting in a firm texture and a refreshingly mild flavor.
