Green Pepper Miso (ピーマン味噌, Piiman miso) is a versatile seasoning from Iwate Prefecture, featuring a perfect balance of the gentle bitterness of green peppers and the natural sweetness of rice malt.

This unique creation was born around 1975 when green pepper cultivation expanded in Iwate, and local farmers sought creative ways to utilize surplus peppers. Inspired by "Koji Nanban," a traditional condiment made by simmering chili peppers with rice malt, they adapted the recipe to develop Green Pepper Miso.

The primary ingredients include finely chopped green peppers, rice malt, soy sauce, sugar, and sake, which are simmered together to achieve a sweet and savory flavor.

Green Pepper Miso is not only an excellent topping for rice but also pairs beautifully with dishes like chilled tofu and grilled eggplant. It can also be used as a savory seasoning for stir-fries. Its sweet and tangy notes complement light and crisp varieties of Japanese sake, such as junmai or honjozo, enhancing your dining experience.
