Mokuzugani Crab (モクズガニ, Mokuzugani) thrives in the pristine streams of the Chūetsu region in Niigata Prefecture, an area surrounded by beautiful natural landscapes. The clear and untouched waters provide the perfect habitat for these vibrant freshwater crabs. Unlike their ocean-dwelling counterparts, Mokuzugani crabs are cherished for their unique and rich sweetness, especially found in the crab miso (the flavorful paste inside). Female crabs with well-developed roe are particularly prized as a rare delicacy.
