Rock oysters (岩牡蠣, Iwagaki) from Tottori are known for their impressive size, with some reaching up to 20 cm in length and weighing as much as 1 kg. These natural treasures are harvested through methods like free diving.
Often referred to as the "milk of the sea," Iwagaki are best enjoyed raw with a squeeze of fresh lemon for a bold and refreshing experience. Unlike winter oysters, these delicious shellfish are in season from early summer to mid-August, making them the ultimate taste of Tottori's summer.
