About Chirimen (Dried Young Anchovies)
Chirimen (ちりめん) are dried young anchovies, prized for their delicate texture and rich flavor. Off the coast of Miyazaki Prefecture, the Hyuganada Sea experiences some of Japan’s fastest ocean currents due to the northbound Kuroshio Current. This dynamic environment produces firm, flavorful juvenile anchovies, known as shirasu.
The Miyazaki Port area benefits from the nutrient-rich waters of the Oyodo River, a major river that flows into the sea. These nutrients lead to an abundance of high-quality plankton, creating an ideal fishing ground. Thanks to this, shirasu fishing thrives here, making Miyazaki one of Japan's leading shirasu suppliers.
Caught in the shallow waters near river mouths where freshwater flows into the sea, chirimen from the Hyuganada Sea are a testament to this area's natural bounty. With strict freshness control from catch to processing, these pristine white, umami-packed delights are highly esteemed throughout Japan.
