Jumonji Ramen (十文字ラーメン, Jumonji ramen) is a beloved local ramen from the Jumonji area in Yokote City, Akita Prefecture.
Its standout features include a savory soy sauce-based broth made from dried sardines and bonito flakes, paired with unique thin curly noodles that are made without kansui (alkaline water). The noodles have a delightfully chewy texture that perfectly complements the light yet flavorful soup. Toppings often include chashu (braised pork), green onions, and bamboo shoots, alongside occasional additions like fu (wheat gluten) or kamaboko (fish cake), which contribute to its gentle and comforting flavor profile.
