Yama no Imo Nabe (山の芋鍋, Yama no imo nabe) is a beloved specialty from the Tazawako area.
This hearty hot pot features "yama no imo," a starchy mountain yam similar to nagaimo but with a stronger stickiness. The yam is grated, shaped into dumplings, and cooked with ingredients like meat, mushrooms, seri (Japanese parsley), and green onions.
The seasoning and ingredients vary depending on the inn or chef, giving each bowl its own unique twist. Some versions use a soy-based broth, while others favor miso. Chicken, pork, or even duck may be added, offering plenty of creative variations for this comforting dish.
