The origins of this dish trace back to the Taisho era when a Chinese-style noodle dish called "Shina soba" was introduced to Kushiro by a chef from Yokohama.

Over time, the recipe was refined to suit Kushiro's climate and tastes, and by the early Showa era, it had become a popular offering at street food stalls.

The broth is delicately prepared from a combination of ingredients like bonito flakes, kombu (kelp), chicken bones, and vegetables, then enhanced with a mellow soy-based seasoning.
