Bishu Nabe (美酒鍋, bishu nabe) is a specialty of Saijo, known as the sake capital. This unique hotpot features pork, chicken, and a variety of vegetables simmered in Japanese sake with just salt and pepper for seasoning. Originally created as a meal for sake brewery workers, its simple seasoning allows the natural flavors of the ingredients to shine without affecting sake tasting. The alcohol is cooked off, making it suitable for children and those who don’t drink alcohol. With no sugar or soy sauce used, the sake enhances the fresh flavors of the ingredients, offering a light yet savory dish that pairs perfectly with a glass of Japanese sake.
