Soba Meshi (そばめし, Soba meshi) is a beloved local specialty from Kobe, Hyogo Prefecture. It’s made by finely chopping stir-fried noodles and mixing them with rice on a teppan grill.
The dish originated in Kobe's okonomiyaki restaurants when a customer brought in a cold bento and asked the chef to stir-fry the rice together with noodles. This simple yet flavorful creation has since become a local favorite.
