Shinshu Soba
The original buckwheat noodles, made with over 40% buckwheat flour
เกี่ยวกับ Shinshu Soba
Shinshu Soba (信州そば) originates from Shinshu, an area known as the birthplace of “soba-kiri,” the cutting-style soba noodles. Located in Nagano Prefecture, the region’s significant temperature differences between day and night, along with its well-drained mountainous soil, provide the ideal conditions for high-quality buckwheat cultivation.
The name “Shinshu Soba” has become famous for its rich flavor and superior quality. To uphold this prestigious brand, only dried soba noodles made with at least 40% buckwheat flour are permitted to use the certified logo mark ensuring their authenticity.
