เกี่ยวกับ Anyoji Ramen
Anyoji Ramen (安養寺ラーメン, Anyoji ramen) is a local specialty from Saku City in Nagano Prefecture, featuring "Anyoji Miso." This miso traces its origins back to the Kamakura period when a monk named Kakushin brought miso-making techniques from China and introduced them to the region, making it the birthplace of Shinshu Miso.
Leveraging this traditional miso, local commerce chambers and ramen store owners collaborated to create Anyoji Ramen.
Anyoji Ramen’s standout feature is its mellow richness and profound flavor, thanks to the long-aged Anyoji Miso used. Each restaurant offers its unique twist on the recipe, delivering diverse flavors in the soup and toppings. Loved by locals and visitors alike, it has become a signature dish of Saku City.
By incorporating local ingredients and blending a rich historical tradition with innovative creativity, this exceptional bowl has gained attention beyond the region, capturing hearts nationwide.
