About Komatsu Udon
Komatsu Udon (小松うどん, Komatsu udon) is a local specialty from Komatsu with a legacy spanning over 300 years. It is known that the famous haiku poet Matsuo Basho enjoyed this dish, and during the Edo period, it was supplied to the Kaga Domain and even sent to shoguns and feudal lords as an official offering.
The noodles are thin yet possess a pleasant firmness, made with pure spring water flowing from the revered Mount Hakusan. The broth, light and flavorful, features a delicate blend of fish flakes and kombu (kelp). The combination of the smooth, silky texture of the noodles and the handcrafted dashi creates a perfectly balanced and delightful dining experience.
