About Tochi Mochi
Tochi Mochi (栃もち, Tochi mochi) is a traditional delicacy from the Hakusan foothills, distinguished by its slightly brownish color and tiny dark specks. Historically, it originated as a creative solution in mountain areas where flatlands were scarce, and rice yields were limited. Chestnuts were mixed with white rice or mochi rice to stretch food supplies during times of famine.
Born from the resourcefulness of mountain life, Tochi Mochi remains a cherished tradition in the Hakusan region, especially during New Year celebrations and local festivals. This treat requires an intricate and laborious preparation process known as "akubai" (removing the bitterness from the chestnuts), which has been carefully passed down through generations.
The flavor is rustic yet refined, with a subtle bitterness from the chestnuts that balances beautifully with its mild sweetness, leaving a refreshing aftertaste. Tochi Mochi comes in a variety of forms, including simple round mochi filled with sweet bean paste or coated with coarse red bean paste on the outside.
