Banshu ramen introduction

Banshu ramen is a local ramen popular in the Kita-Harima region centered around Nishiwaki City, Hyogo Prefecture. The biggest characteristic is the “sweet soup.” Sweetness with crystal sugar, onions, etc. is added to soups based on chicken bones, pork bones, vegetables, and soy sauce, and first-time eaters say “sweet!” It brings me a surprise. Simple ingredients such as pork, green onions, and bean sprouts are placed on thin, curly noodles, and it is a cup where you can feel a firm richness even in the sweetness. The roots of this sweet soup come from the textile industry in the Showa 30s. Sweet ramen was made according to the tastes of young female workers who worked at the Banshu textile factory in Nishiwaki City at the time, and it has taken root in the community until now. It has been loved by many local residents for over half a century, and is known as the representative local ramen of Hyogo Prefecture.
