Anyouji Ramen introduction
Anyouji Ramen (安養寺ラーメン, Anyouji ramen) is a specialty ramen from Saku City in Nagano Prefecture, made with “Anyouji Miso.” This traditional miso has its origins in the Kamakura period, when a monk named Kakushin brought the technique of miso-making back from China. It is said to be the birthplace of Shinshu miso, a cherished variety from the region. Using this historically rich miso, the local Chamber of Commerce and ramen shop owners collaborated to create what is now known as Anyouji Ramen. What makes Anyouji Ramen stand out is the mellow richness and profound depth of flavor of its long-fermented miso. Each ramen shop puts its own unique spin on the soup and toppings, allowing customers to enjoy a variety of distinct flavors.
