Bishu Nabe (美酒鍋, Bishu nabe) is a signature dish from Saijo, known as the "Sake Capital." This unique hot pot features pork, chicken, and fresh vegetables cooked with just sake, salt, and pepper. Originally created as a simple staff meal for sake brewers, this minimal seasoning method was designed to preserve the natural flavors and avoid affecting their sake tasting.
The alcohol content is cooked off, making it suitable for children and those who don’t consume alcohol. Without using any sugar or soy sauce, this light and simple dish highlights the rich flavors of the fresh ingredients.
