About Fuchu-yaki
Fuchu-yaki (府中焼き, Fuchu-yaki) is a unique style of okonomiyaki originating from Fuchu City in the eastern part of Hiroshima Prefecture during Japan’s economic boom era.
This savory pancake is made without the usual bean sprouts but instead features a generous amount of cabbage and minced beef or pork mixed with noodles. The minced meat’s rich umami combines with the cabbage to create a fluffy interior, while the outside is delightfully crispy thanks to the meat’s rendered fat.
What truly sets Fuchu-yaki apart is the use of minced meat instead of pork belly. As the meat cooks on a hot iron griddle, its fats spread out and lightly fry the noodles, giving them a perfectly crisp, crunchy texture.
