About Anago Manju

Anago Manju (穴子まん) is a unique steamed bun featuring Miyajima's famous conger eel (anago). The anago used in this dish is carefully selected to ensure the best quality for each season. To enhance the natural flavor of the eel, a hint of yuzu pepper is added as a secret ingredient. This results in a refined and sophisticated taste that combines the rich umami of Japanese conger eel with the zesty spiciness of yuzu pepper.

The bun is also filled with kinpira gobo, a healthy and flavorful Japanese stir-fried burdock root, making it both nutritious and satisfying. The slightly spicy seasoning complements the savory aroma of the grilled anago, creating a delightful bite. During development, extra effort was made to achieve the perfect size and texture for the anago pieces, ensuring each bite retains its delicious, distinct character.
