Okonomiyaki in Hiroshima is the mainstream of Okonomiyaki, where vegetables such as dough and cabbage, meat, and eggs are layered. Noodles such as Chinese noodles and udon are often stacked, and the simplest order is “Nikudama soba”. On the way to bake, the dough, which became the top side, plays the role of a lid, steamed cabbage. This is the secret of deliciousness. Because it is layered and baked, the ingredients become layers when cut. Therefore, the spatula can be eaten well if you put it vertically from above and cut it. For each store, such as otafuku sauce and carp sauce, we use a variety of patronies for each store or add unique ingenuity. Meat, eggs, and noodles are added to cabbage, and have a good balance of volume and nutrition, making it a meal alone.
