Miyazaki Katsuo Umikko-Bushi introduction
Miyazaki Katsuo Umikko-Bushi (宮崎かつおうみっこ節) is a handcrafted delicacy produced by the Women's Fisheries Processing Group of the Nichinan City Fisheries Cooperative in Miyazaki Prefecture. Made exclusively from bonito either caught locally in Miyazaki or harvested by Miyazaki's one-line fishing boats, this dish embodies artisanal craftsmanship. Every piece is carefully prepared by hand, taking two full days to create. Compared to other bonito-based products like namari-bushi (seasoned and lightly boiled bonito), it stands out for its juicy, tender, and fluffy texture. The sweet and savory soy sauce seasoning, perfected through a secret recipe passed down through generations, harmonizes beautifully with the natural flavor of the bonito.
