In Miyazaki Prefecture, the town of Tano is famous for producing the most dried daikon radish. This is thanks to the cold winds that blow down from Mount Wanizuka on Tano's southern side, its dry winters, and the ideal temperatures between 0 to 15 degrees Celsius, which are perfect for drying daikon.
Additionally, the region’s unique soil plays a crucial role. Known as "Kuroboku soil," a volcanic ash-rich earth ideal for growing daikon, it retains water well and supports swift growth. This allows daikon to grow plump and tender with thin skins in a short time.
Pickles made from these premium daikon radishes become rich and flavorful takuan (Japanese pickled daikon). Every crunchy bite bursts with a concentrated umami flavor, a taste that spreads delightfully across your palate.
